Potato Recipe : Potato Bruschetta


INGREDIENTS

+ 1 cup spinach

+ 4 tablespoons extra virgin olive oil

+ 1 cup mozzarella cheese

+ 4 tablespoons italian style sun dried tomatoes packed in oil

+ 2 cups simply potatoes, shredded hash browns

HOW TO PREPARE

                    Make 4 round potato patties.

Flatten and grill hash browns in olive oil in pan over med.

High heat until golden brown on both sides. (about 8 minutes each side)

Top each patty with cheese.

Saute spinach and tomato about 15 seconds.

Top each patty with tomato and spinach.
Enjoy, your POTATO BRUSCHETTA is ready.
